Sweet Potato Breakfast Hash (Egg-Free!)
Instructions
  1. In a large skillet, cook the bacon until crispy. Always start with a cold skillet so the bacon cooks evenly.
  2. Remove the bacon, and add in the onions. Cook for a few minutes, then add in the sausage (I buy precooked sausage, but you can also cook it beforehand). Next add in the minced garlic and cook for a few minutes.
  3. Meanwhile, dice up the cooked bacon.
  4. Add in the coconut oil to the sausage and onion mixture. The pan should be nice and hot still, so the oil will crack a little. Add in the shredded sweet potato now. Cook for about 5 minutes. It should be getting a little crispy with the oil.
  5. Add in the sliced bacon, reserving a little bit for the top. Cook just a few more minutes until the sweet potato is cooked through.
  6. Add to a baking or serving dish, top with the rest of the bacon. You can serve immediately, or heat it up in the oven when you want to serve it.
