Sometimes it’s nice to bake something that doesn’t involve many ingredients!
I am constantly in the kitchen baking from scratch, and I really enjoy it! I’m not always in the mood to to take out dozens of ingredients and dirty up so many dishes all the time though, so I love easy recipes that involved just a few ingredients.
I whipped these up the other morning for brunch, and my husband loved them! He absolutely loves donuts, but due to his health problems, he can’t eat them very much. Anytime I can turn a treat into the shape of a donut, then I most definitely will! If you are in the mood for a healthier, clean eating donut, make sure you check out these Strawberry ones.
These donuts are just like a blueberry muffin, but more fluffy with the addition of an egg!
3 Ingredient Blueberry Muffin Donuts
โฅ 7 oz package of muffin mix ( Any brand, as long as it is 7 oz, I used Martha White)
โฅ1/2 c unsweetened vanilla almond milk (almond milk makes this creamier, but you can use any milk)
โฅ1 egg
โฅOptional : Handful fresh blueberries
โฅOptional 1 tsp maple extract (my favorite is this Maple Extract)**
Mix all the ingredients until just blended (don’t over mix!). Fresh blueberries and maple are totally optional. I happened to have some fresh blueberries on their last leg, so I threw them in. Maple just adds a hint of richness. Add to a greased donut pan. If you don’t have a donut pan, I love to use a mini muffin tin too!
Bake at 350ยฐ for 8-10 minutes, just until they are cooked through.
As a chemist, I love extracts for adding flavor to anything I mix up in the kitchen. My favorites include: Pure Vanilla Extract , this Caramel Extract , and this All Natural Butter Extract.
I always used the rest of the mix to add into mini muffin tins, and they are like little donut holes! These are just as delicious. If you are really in the mood you can also add a simple glaze to them ๐

These look sooooo yummy! I actually didn’t like muffins or blueberry cake donuts (similar) until I was pregnant! Now I still like them, whereas I couldn’t stand them before. I need to try these sometime. They look very do-able!!!
