The best thing to do in the summer is eat a popsicle! It’s like a taste of childhood, instantly transporting you back to hot summer days when you didn’t have an adult care in the world. My personal favorite were always those chocolate crunch ones with the ice cream inside! I still love popsicles just as much as I did back then, but now I like to make them a little bit more adult friendly. AKA lower calorie 🙂
But the taste is still AMAZING! Chocolate mixed in with crunchy chunks of cookies and cream makes this a perfect summer dessert. Low Calorie Chocolate Cookies and Cream Popsicle
♥1/2 cup greek yogurt
♥1/2 unsweetened vanilla almond milk
♥1 tbsp instant chocolate pudding mix
♥2 tbsp sweetener of choice
♥2 crushed up oreo like cookies **
♥1 diced cookie
Mix everything together, add in the diced pieces of cookies last. Put into a popsicle mold. This made 3 large ones for the mold I had. If you had smaller molds it may stretch to 5 or 6. Freeze for at least 4 hours, preferably overnight. ** I used these gluten free cookies, they taste just like an oreo!
Important Chemist Note! These popsicles have very little fat or cream, so they are more likely to freeze firmer. To remove, place under running water for a minute or two to loosen popsicle, then it should slide right out!
We’ve already gone through a couple of batches of these at my house! I see more in the future too 🙂
