Have you ever had a steamer? It is basically like a latte without the coffee! It is the most perfect drink for cooler months and it makes the perfect late night treat since there is no caffeine to keep you up all night. I make steamers all the time in all flavors because they are just so cozy and comforting, especially at night when I stay up reading a mystery.
Since it is November now, it is time to really take advantage of all things pumpkin, cozy and warm. For me, I fully embrace this pumpkin mania until Thanksgiving…then it is all about peppermint, gingerbread and Christmas love.
If you hate pumpkin or prefer other flavors, you can ELIMINATE IT 🙂 That is what is awesome about these recipes. Not everyone is a pumpkin fanatic like I am, so I wanted to make sure you could enjoy this to with just the cinnamon. It is equally as good!
I was out for an early morning stroll a few days ago and out of know where, these two pretty little leaves came fluttering by. I was surprised since we are still full on green mode for the trees in Texas. They will turn soon, but I was ecstatic to see these beauties, so I grabbed them to take home. Now, on to this fun, easy recipe you can enjoy anytime of day.
Creamy Cinnamon Pumpkin Steamer (Serves 2)
- 2 cups unsweetened vanilla almond milk
- 1/4 cup pumpkin puree
- 2 tbsp coconut sugar or brown sugar (can substitute coffee creamer here too :))***
- 1/4 cup or so of your favorite sweetener (I use stevia)***
- 1/2 tsp cinnamon
- 1 tsp maple extract
In a small sauce pan, combine ingredients. Cook over medium heat on the stove top until the sides gently start to bubble (about 5 minutes), then remove from heat!
Pour into a glass and top with whipped cream and a sprinkle of cinnamon.
If you hate pumpkin, eliminate it and add some coffee creamer instead. Also, adding cream instead of brown sugar will give it a creamier texture.
Add more or less sweetener to taste, I use about 1/4 cup and it is pretty sweet!
I plan on enjoying this tonight while reading a cozy mystery since it is finally cooler weather in Texas!

This sounds wonderful. I bought some pumpkin to make a smoothie but this sounds like a good choice too. Especially since it is going to be getting cold here.
