The smell of apple baking in the oven is such a heavenly scent. Apples are rustic, earthy and perfect on their own, but when they are baked…it is on another level!
This recipe was inspired by my Grammy’s apple pie and those fantastic rustic scones at a cute little country coffee house. My chemist twist on these is a combination of healthy oat flour and spices with a hint of maple syrup. An apple is full of so much flavor, you really don’t have to add a ton of butter and sugar to achieve a nice flavor!
I bake with oat flour weekly for us at home. It is a perfect wheat free alternative to All-purpose flour. I have gotten to where I prefer it in baked goods over any other type. Like these fluffy pumpkin spice cookies from last week which turn out amazing with oat flour!
Oat flour is also fairly cheap at the store, or you can make your own simply by grinding up oats in a food processor.
I made this over the weekend after we took a nice long early morning walk (still 100 degrees here!), but we are fully embracing the nearness of fall in our house hold 🙂
As you can see above, my little kitchen helper is always close by when I cook. He LOVES apples almost as much as I do, so he got a little treat too 🙂

- 1 cup oat flour
- 1 tbsp coconut sugar
- Raw turbindo sugar (optional, for the top)
- 1/2 cup coconut sugar
- dash of salt
- 2 tsp baking powder
- 1 tsp apple pie spice
- 3 tbsp coconut oil
- 2 cups diced apples (half green, half red)
- 1/2 tbsp honey
- 1 tbsp maple syrup
- Preheat oven to 350 degrees.
- In a medium bowl, mix together oat flour, 1/2 cup coconut sugar, salt, baking powder and spice until combined. Add 3 tbsp coconut oil and stir until mixture is crumbly in texture.
- In a small sauce pan, combine diced apples, honey and maple syrup. Heat for a few minutes until apples are softened a little bit. You can also just microwave them for a minute or so.
- Set aside half of the diced apple mixture for topping later. Combine the other half of apple mixture with the oat flour batter. Mix until combined. Texture will be sticky and will almost seem like you need more liquid, but it is good!
- With wet hands, pat mixture into ball and add to a sprayed pan. Cut into two large or four small servings, but DON'T separate!
- Sprinkle the top with the other 1 tbsp of coconut sugar and the raw turbindo sugar (optional, but gives that scone texture on top).
- Bake at 350 for 10-12 minutes, just until done. Top with the rest of apple mixture just before serving.

These scones are perfect topped with maple syrup or even just some yogurt. They are also great in the fridge after a few days after the flavors have meddled together.
If you prefer really sweet scones, feel free to add more sweetener and bake with some brown sugar on top!

Oh sweet baby molasses, these sound incredible. I usually wait too long to embrace fall and then everyone is over it, so I’m starting early and gathering all the fall recipes. They are perfect for breakfast. Not too sweet, but perfect to start the day. They make a smaller portion, but you can definitely double the recipe to make more 🙂

Oh Yum!!! I LOVE apple pie, apple turnovers, and I think I’ll love these scones!!! I cannot wait to make these… I was drooling at the pic of this on IG. You can definitely sub cinnamon and any other kind of spice! Sometimes I do a combo of both, but anything you have is perfect. I am looking forward to the first day of fall. Last year it was over 100 here, but I like to pretend it is cool and crisp inside 😉 Haha, have a wonderful day Laurie!
