Happy March!
I am a little shocked it’s the first Friday of March already, but I am so exited spring is right around the corner!
This week went by so fast. My husband’s 30th birthday was on Sunday. He had to work, but I made him some fun mint chocolate cupcakes (GF DF). He LOVED them! You can see the final product on Instagram I shared a few days ago 🙂
On Tuesday, I had the opportunity to visit a really neat, old-fashioned bath house in Mineral Wells. I am really excited to share all the neat details with you soon. Not only was there so much chemistry to talk about from this, but so many health benefits too. It was a blast! I haven’t been to Mineral Wells, TX in years. I grew up about an hour away, so we would go occasionally. My absolutely favorite part of this town is the old Bakers Hotel. It is breath taking seeing this old majestic building right in downtown. I am a sucker for old architecture like this. You can read about this hotel here. And stay tuned for a full recap on our mineral baths!
I was trying to vacuum the a few days ago, and Ruger was passed out sleeping, so I decided to wait. He just looked too cute laying there! ♥

Recently I have been making all kinds of roasted vegetables. My new favorite are these sweet & spicy carrots! These carrots are so delicious on salads, chicken, fish, and even just as a side.
For the Carrots:
Add some carrot sticks to a cast iron skillet, add a little olive oil, salt, pepper, liquid aminos, coconut sugar, and a little cayenne pepper. I had so many questions about liquid aminos last time I talked about it, so you can learn more about that here.

I actually used a GF chocolate cake mix. Then I jazzed it up with some chocolate icing (I just melted some dark chocolate with a touch of coconut oil and a little powdered sugar until it was stiff), then I added some mint extract and a little espresso powder. I share some of that in this post 🙂 They turned out really good! I tried out this mix, and it was pretty good.

Happy Friday and first weekend of March! How can that be?! I want to try a mineral bath/spa – I will research locales. Oh Ruger, such a cutie. I’m sure he appreciates your not disturbing him (lol). I really need to eat more vegetables, so thanks for sharing how you do your carrots! I find I can’t eat that many raw – I need to cook them or season them somehow. haha
