These fluffy pumpkin spice cookies are the perfect way to welcome September! They are billowy, healthy and so yummy!
I experimented with this recipe last fall off and on until I achieved a nice fluffy texture. I wanted something that would be perfect with coffee and tea, or a night time treat. I bake cookies for clients all the time and they are, of course, traditional cookies with a base of butter, sugar, and flour. I haven’t shared any of those recipes yet since I sell them, but when I cook at home for my hubby and I, I like to make good for you options that are still big on taste!
My Chemist twist on these is the addition of pumpkin spice extract, I love extracts! They add a concentrated flavor with a small addition.
Oat flour is one of my favorite things to bake with. I think it makes a wonderful substitute for traditional flour, plus it is really good for you. Other oat flour recipes I love are these awesome brownies and these delicious donuts!
A little fact about me: I love fall and I adore pumpkin. I love pumpkin treats, pumpkin scents and pumpkins in general. I think they are beautiful and I can’t wait to buy the first one from the store this season!
Anyways, on to these wonderful fluffy pumpkin spice cookies!
Fluffy Pumpkin Spice Cookies
- 1/2 cup oats
- 3/4 cup oat flour
- 1/2 cup pumpkin puree
- 1/2 cup applesauce
- 1/2 smashed ripe banana
- 1/2 cup sweetener ( I use stevia, use anything that measures like sugar)
- 1 tsp ground flax seed (optional, but adds to the texture)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp pumpkin spice extract
- dash of salt
- Optional: Add some nuts or chocolate chips!
Directions:
Mix together the banana and pumpkin until a smooth texture. Add in applesauce until combined, then add the rest of the ingredients and mix until just combined.
Use a tablespoon and add 2 scoops per cookie. This will make about 12 cookies or so with a little leftover.
Bake at 350º for about 12 minutes, just until they are cooked through.
Bonus:
You can also save left over batter to make an easy 1 minute mug cake! Just add about 4 tablespoons to a mug and microwave for about a minute, or until cooked through! This makes it like a little cupcake!
You can enjoy this cookies warm, cold or even save the batter to bake anytime you want!

This is an awesome question! I love it. Oat flour is basically just oats that are ground up into a fine flour like texture. You can make your own, or just buy it in the baking section. It is fairly cheap, so I always buy it. It is a healthier alternative to processed flour made from wheat. It is very dense in texture, so I find that it works great with baked goods. I also use it in place of regular flour in many occasions.
Stevia is a zero calorie natural alternative to sugar. It is basically nature’s version of splenda. It is a better option health wise than sugar and sugar substitute. I buy all types of brands of it. Also in the baking section. Truvia is a very popular type of stevia people use. I use organic brands I find at HEB. I think it tastes good and it is very sweet! Good morning Alexis! How are you doing? Oh these treats look so yummy! I was just going to ask about grinding up oats to make the oat flour and saw your comment above. I love pumpkin puree – straight out of the can with some salt and pepper and cayenne… The dog loves it too. Do you have suggestions for savory cooking with pumpkin?
Going to check out the other two recipes – I’d love to use oat flour more. Is it a straight 1:1 substitution ratio to all-purpose or whole wheat flour?

I love pumpkin puree too, it is so versatile! And the puppies love it, so i love getting to share 🙂 I have a savory pumpkin cornbread recipe that is really good, I will have to share that with you. I have also made a pumpkin chili that was good, but my husband didn’t like it. He only likes traditional sweet pumpkin recipes!
It can definitely be a 1:1 substitute, although it is more dense. Sometimes I add a little more liquid to a recipe when using oat flour. But it does well in most things! Have a great day Laurie!
