Happy Friday! I don’t know about you, but I am really glad it’s the weekend again. Last weekend was just so beautiful, sunny, and full of all my favorite things, it went by too fast!
The weather is supposed to be WARM and beautiful again, so I am ready to dive into the weekend.
I shared a little sneak peak on instagram of the cookbook I got in the mail. I am trying out a few recipes this weekend and will do a full review soon! I absolutely love trying out new cookbooks, but I have to confess, I very rarely follow the recipes. I usually just like getting inspiration from certain recipes and doing my own twist 🙂
Favorite Memory: So, last year on this day I posted this picture of our bulldog statue buried in snow…today it will be 80 degrees. Talk about a complete 180 from last year. We had so much snow last year, but this year it has been so warm. I hope we get a long spring…Texas has been known to go from winter to 100+ degrees all summer pretty fast! P.s – check out my post from Tuesday, 7 Unmistakable signs spring is coming!
Favorite New Item: I got another rug for my kitchen and I am loving the colors. Ruger is obsessed with it right now and every morning when I go in my kitchen to make coffee, he is usually sprawled out on top, snoring! I shared a video on snapchat (username :: alexisroch) last week of that…when he snores, a bomb could go off and he wouldn’t hear it!

Favorite Meals:
I have been changing up our meals this week. I usually cook a a big meal on Sunday that will last for my husband throughout the week, then make some fun stuff on the weekend. His work schedule is so crazy during the week, I never know when he is going to get home. Lately, I have been roasting a chicken on Sunday and making meals with it all week. I am sharing my super easy recipe in my next newsletter (coming out next week!!!). If you don’t get my letter yet, you can sign up below!
Coming up on Monday…Completely dairy-free chocolate chip cookies!

Happy Friday! I wish it were going to be 80 degrees here! Last week I cooked a few pounds of chicken in the crock pot to eat on all week for lunches and dinners. I plan to do that again this coming week! It really helps out with the menu making and the budget. Happy Friday!

Crockpot cooking is definitely great for that stuff! I love how time efficient it is to cook a bunch at once and have meals all week! Happy Friday! Have a great weekend!

Happy Friday Alexis! Preparing to be slaughtered by rain and wind… As Christine wrote, I thought that was a real bulldog covered in snow, but then I re-read your words “statue” OOOO. The Buzzfeed article was creative/clever ways to maximize space… I love a homemade roasted chicken – I do mine in the crockpot. Sooo good, and easy to mix up with other ingredients for “fresh” meals (and Ann loves some too). Looking forward to your choc chip recipe! Enjoy the weekend… 🙂

Roasted chicken is always so good! That statue really does look real…Ruger looks funny sitting next to it because it looks like him lol. Have a great weekend!

Where did you get that bulldog statue? I want one! It’s crazy how the weather is completely opposite this year. Cute new rug…Lola has ruined so many rugs from chewing on them. Ugh!
Alexis says
I got it at Lowe’s! I think they still have them too. OMG, we have been through so many rugs from him chewing…luckily (fingers crossed…) he is done with the chewing phase now. He is almost 2, but he is a big chewer. Our table legs are spindles now from his puppy days lol
