The First week of 2016 was an interesting one to say the least. I finally got the Christmas tree up (sad times) and all the decorations. We spent last weekend savoring all the beautiful lights and treats before saying goodbye until next year. Isn’t that the saddest part?!?
I shared a sneak peak on instagram and I’ve been talking about it for weeks, but I am just really excited to share it this month! Leftover champagne cupcakes recipe will be in this months newsletter, coming out any day now! I made them again using applesauce instead of oil and they turned out amazing! I always use the leftover batter to make donuts because everything is more fun in the shape of a donut right? So, don’t forget to sign up below for the letter. So far my special recipes have included pumpkin cookie bites, pumpkin latte donuts, special christmas cocoa, honey balsalmic roasted Brussels Sprouts and other fun stuff. If you want a copy of any of those recipes, let me know 🙂
I love spending time at my parents house, it is always so peaceful and relaxing. I love sitting on the back porch with this view! Winter in Texas isn’t my favorite, but there is always beauty somewhere!
I shared a little sneak peak yesterday of a recipe I have been working on for Ruger. He knows when I am making something for him and he fully expects to be front and center to watch! I will share the recipe soon, they turned out great! He loves them 🙂
I shared some photos from the first week of the year yesterday, and I mentioned french press coffee. One of my projects for this year is to research and bring you the best tips for all types of things, like coffee brewing. I started off with my DIY cold brew, and on Monday, I am sharing my great french press tips. I am super addicted to this method. So good! I have so many fun things coming up this year, I am so excited!
Newsletter comes out this weekend, don’t forget to sign up for a healthier champagne cupcake!
Happy New Year! What have you been up to this first week of the year?

Oooh champagne cupcakes? Yes please! Winter in general is not my favorite, but I do love the break in humidity. Taking down the Christmas decor is always a sad day, I think the twinkle lights everywhere are what I miss the most! Happy Friday <3

Happy Weekend, Alexis. Egads, the first week of January is gone already. It’s been a long work week – back to 5 days after short weeks for the holidays. Love the pic of Ruger standing to scope out any goodies in the kitchen – he’s adorable! Can’t wait for the puppy treat recipe – maybe something I can make for Ann. I don’t drink coffee, but I have been drinking a lot of (decaf) peppermint tea lately – it’s great hot or cold. Will be hanging around the house most of the weekend – more rain coming. Have a great weekend!
Alexis says
I think Ann will really love these 🙂 I love peppermint tea, it helps my stomach so much. Always a nice treat in the afternoon! That sounds like how our weekend will be. My hubby is studying for another exam so we will be hermits the next few days 🙂 Have a great weekend!

It’s possible to have leftover champagne? 😉 The cupcakes sound awesome, though!
Alexis says
Right?!? Lol Or maybe you can just buy a new bottle to bake with (and drink 🙂 ) They are really awesome cupcakes that are so light & fresh. If you want the recipe, let me know. I sent it out in my newsletter yesterday 🙂
