Friday Favorites - Loving All The Summer Sunshine

After weeks and weeks (and weeks) of rain, we’ve finally had some beautiful weather in Texas! We have been loving all the summer sunshine this week. It has also been very mild in temperature (high 80s and low 90s) which is great for this time of year!

Last weekend we had to get some repair stuff and Lowe’s, and I can’t help myself, but I always have to browse the garden section. They were having a huge sale on hanging plants, so I bought a few of them. I hung this Lantana up in the pergola. It is starting to bloom now too. It adds such a cheerful element!

I always bake my hubby a dessert on the weekend that he can have throughout the week after he gets home from work and has supper. I always like to bake with healthier options and since my husband can’t eat dairy, I have been experimenting with a ton of dairy-free baked goods. This is a dairy-free chocolate cake with vanilla dairy-free icing. He swears it was the best cake he’s had in years! I don’t really eat cake, but I thought it turned out pretty good too. Plus sprinkles make everything better right??

I took a stroll down memory lane this week when I was digging through my old photos. I found all these fun pictures from when we lived in San Diego. I shared this post on Wednesday about the San Diego County Fair in 2008. Honestly, that is one of my favorite, most vivid summer memories. Especially as an adult. I really miss living in California in the summer. Especially seeing sunsets like this one everyday 🙂

Chubby Bulldog, Loving All The Summer Sunshine

You probably see Ruger everyday on snapchat (alexisroch) doing something silly. Everyday, he does something to make me laugh. I love that guy! One of his favorite past times is staring out his window watching the cows. A few days ago, he watched them for an hour! We also have ducks in the pond across the street and sometimes they will walk up the road. He LOVES watching them too!

Friday Favorites - Loving All The Summer Sunshine

I am excited to share this month’s newsletter! I should have it going out this weekend, but it has some fun summer grilling recipes. I shared a picture of my guacamole on instagram last weekend and everyone wanted details on it, so I am adding that to the newsletter too. My other recipe is full of pineapple (don’t forget to check out this post!!), apricot and is the perfect thing for grilling chicken or even fish.  That is one of my favorite things about this time of year!! Grilling outside and all the fresh flavors!

And I will definitely be making this french press coffee sorbet for dessert again!

    I recently signed up for your newsletter so this will be the first one that I will receive. I’m looking forward to it & I bought Pineapple today! You mentioned how easy they are to cut & that you might give a tutorial on that sometime. They seem so messy when I cut them but they are worth it!

      Thank you! My husband really loved it! He is severely allergic to any type of dairy, so we are all about the dairy-free stuff around here. This one tasted just like a regular cake 🙂 Have a great day!
