It’s the Monday before Christmas…is that possible? I don’t see how it can be at all! As a kid, this time of year would DRAAAAGGGG by so slowly and my excitement for Christmas Day would continue to grow until I thought I would burst. Now as an adult, I keep wishing time would slow down a little bit.
I think that is why I like to take advantage of each season fully, to embrace each moment as much as possible!
As Christmas draws near, I am completing all of my Christmas traditions and my favorite one is driving around with my husband looking at Christmas lights, listening to Christmas music, and sipping on something warm and cozy.

That is what he will be drinking on our drive around light tour, but I wanted something a little more non traditional!
You can make this so many different ways and it is so fun to play around with. If you are having a little cocktail party, you can even add some whipped cream vodka to make this extra special! As you know, I take medications prohibiting any alcohol, so I have to stick to the mocktail versions of things, so this had to really be full of flavor!
Without further ado:
Gingerbread Hot Chocolate:
- 8 oz water
- Gingerbread tea (sub chai if you don’t have this)
- 1 packet of your favorite hot chocolate (or my homemade version in newsletter)
- 1/2 cup unsweetened vanilla almond milk**
- Optional: 1 oz whipped cream vodka
- Whipped cream or marshmallows
Directions: Steep your tea in 8 oz of water. I like to use two tea bags to make it stronger!
In a separate mug or pan on the stove, mix hot chocolate with the almond milk and heat until combined well. Combine the two together and mix!
If you are going with the cocktail version, add in the vodka!
Top with marshmallows or whipped cream 🙂

I am really looking forward to making this delicious drink for when we drive around and look at Christmas lights one last time on Christmas Eve! It may not be cold in Texas, but you better believe I am going to enjoy this one 🙂
