These gluten-free key lime bars were so easy to make! If you are looking for a really quick recipe, these are the perfect summery treat.
I have noticed a trend from my readers over the past year. They want to know how they can bake easier AND how they can make gluten-free taste better. If you eat gluten-free or use gluten-free mixes, you know that it can have a bad after taste.
A few months ago I shared a post inspired by readers on the things you can add to a gluten-free mix so it taste better. I had many people write in saying these tips really helped out! I love hearing success stories from readers 🙂
The past few months, I have been on a mission to test different mixes! I wanted to see what is the best option for you as far as taste, ease, and flavor options.
Recently, I tried out Silver Fern Brand since they had so many different options to choose from. The flavor of lime this time of year is one of my favorites, so this recipe for gluten-free key lime bars was right up my alley!

- One box Silver Fern Key Lime Bar Mix
- 1/2 cup lime juice
- 2 large eggs
- 3 tbsp vegan butter (or regular)
- 1 tsp lime zest (optional)
- Do everything according to directions on the box. I added the lime zest in addition for a more pop of lime flavor!
- These tasted amazing chilled in the fridge overnight too.
As I mentioned in the recipe card, the only thing I added was a little lime zest in addition to the lime juice. I love the flavor of lime, so it was perfect!
I was pleasantly surprised how delicious this was and how easy these mixes are to make! The big plus for me is they are non-gmo, so not genetically engineered ingredients that are bad for you. A product may be gluten-free, but it can still contain unnecessary ingredients that aren’t good for you!
Another question I get asked is why does gluten-free have the possibility of a bad after taste? I mentioned this a little bit in my gluten free baking tips. Gluten is a wheat protein so anything made from wheat grains has gluten. In order to bake without that, you have to use flour made from tapioca, beans, almond or coconut. Tapioca and beans are typically found in all-purpose mixes since they have a good texture. With that comes the taste. I personally don’t think it is bad, but some people do have a problem with it.
This Silver Fern Brand key lime bar mix didn’t have ANY of that gluten-free like taste, so we loved it! Even my husband did and he is really picky about that!

Oh yum! I never thought I’d love key lime bars because I’m not a fan of lime/lemon flavored things until I went to a bridal shower and tried on. They were so good but very sweet so I think I’d prefer your recipe to the real deal.

Key lime bars definitely have that great sweet lime flavor. I agree, some of the regular types can be too sweet. These were the perfect amount of sweet 🙂
