Healthy Raspberry Oat Brownies that are so rich and decadent, you would never know they are good for you!

Have you ever tried baking with oat flour?? I love baking with it! It forms such a firm, dense structure, you barely notice it isn’t regular flour.

That is what makes these Healthy Raspberry Oat Brownies absolutely amazing! They are so good for you, but they taste so rich and decadent, you would literally NEVER know they are healthy!

Over the past few years, I have done some experimenting with oat flour in different baked treats. I have discovered it makes really good brownies and muffins.

Let me describe these healthy raspberry oat brownies for you…they are really fluffy with a rich chocolate flavor and a hint of tart raspberry permeating through each bite! I actually used an old Betty Crocker recipe in a vintage cookbook as the base for this idea, then went from there. I love digging through old vintage cookbooks for inspiration. Isn’t it funny how different they cooked decades ago?

This version is obviously way more healthy and modern!

Healthy Fluffy Raspberry Oat Brownies

  • 3/4 cup PACKED oat flour
  • 1  – 1 1/2 cup sweetener that measure like sugar (depending on how sweet you like it)**
  • 2/3 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp instant coffee or espresso (makes chocolate flavor pop!)
  • 1/4 tsp pink sea salt (or regular)
  • 1/2 cup non fat greek yogurt (try 2% for more richness)
  • 1 tsp vanilla
  • 2 large eggs
  • 1/2 cup fresh smashed raspberries (I’ve also used blueberries or strawberries, try anything :))
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 mini chocolate chips
  • A few raspberries to sprinkle on top and/or some dark chocolate chips

1. Preheat oven to 350º, spray a 9×9 brownie pan with cooking spray.
2. Mix all the dry ingredients in large bowl. Add in the wet ingredients and mix well. Mixture will be pretty thick, almost doughy, but that is good. Try not to over mix.
3. Spread mixture evenly in pan, then sprinkle fresh raspberries and some chocolate chips on top. I pressed them down into batter to make sure they stayed.
4. Bake 15 minutes or until the middle is no longer gooey. DO NOT over bake..it will get hard. If anything, slightly under bake. It will firm up as it cools 🙂 Let cool, then cut into 8 squares (or 16 smaller squares).

**If your raspberries are tart, I would make sure to add a little more sweetener.

    Oh my gosh! Those brownies look DELICIOUS. I’ve never used oat flower, but I’m curious now!

      Can I substitute sugar with coconut sugar? If so then how much? And can I use frozen raspberry ? As in my country don’t get fresh.

        Yes you can sub coconut sugar. The same amount as the regular type. You can use frozen too
