Baking donuts is by far one of my favorite things to do. I just love eating something that is shaped like a donut.
Traditionally donuts are loaded with sugar and they are amazing! I know I have mentioned it before, but I always try to incorporate healthy options when I bake at home for us. Now, we do indulge in treats occasionally, but for the most part, we keep it light 🙂 I have shared with you about my health and why it is important to me. I also love baking with oat flour. If you haven’t tried it yet, you will love it! It just makes such a rich, cake like texture when it is baked. If you read my blog often, you know I am always experimenting and researching the best way to make something or do something. That is the scientist in me, but I love bringing you my favorites! So, now I will share with you my favorite HEALTHY breakfast or treat!
Healthy Strawberry Donuts with Strawberry Jam Glaze
For the donuts:
- 3/4 cup oat flour, packed very tight
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 cup sweetener (I used regular stevia, use anything that measures like sugar 🙂 )
- 2 tbsp dark brown sugar
- 1/4 cup greek yogurt
- 1/4 cup unsweetened applesauce
- 1/2 cup smashed strawberries (heat for a few seconds, then smash)
For the glaze:
- 1/4 cup milk (I use unsweetened almond)
- 4 tbsp strawberry jam (I use sugar free sweetened with truvia)
- 1/4 cup diced strawberries
Mix up all the ingredients for the donuts until it is all incorporated, but don’t overmix! Fill the a donut pan full. Bake at 350 for about 12 minutes, until the are baked through, but not browned.
Allow to cool. Meanwhile, heat up the 1/4 cup of diced berries until warm, then smash. Add in the milk and jam. It should form a jelly like mixture. If too thin, add in more jam. If too thick, add in a bit more milk.
No donut pan? No problem. I also made them into donut holes with a mini cupcake pan! Bake about 10 minutes for those!
These are so perfect for breakfast, I make them all the time when I need to use up strawberries! In fact, this is great for any berries you have that are on their last leg!
