I made these light and fluffy orange creamsicle cupcakes for my Mom’s birthday and they were a big hit!

One of my Mom’s favorite childhood flavors is orange creamsicle, so I thought it would be fun to recreate that flavor in the form of a birthday cupcake 🙂

Light and Fluffy Orange Creamsicle Cupcakes

  • 1 Box yellow cake mix
  • 1 cup of water
  • 3 eggs
  • 1 tsp orange extract **
  • 1 6oz container of orange yogurt ( I use yoplait)

 

For the Orange Creamsicle Frosting

  • 1 container of vanilla frosting (or any kind you usually make)
  • 2 tsp orange extract**

Directions:

Preheat oven to 350 degrees. Combine all your ingredients and blend with hand mixer. Add to cupcake pan, I made about 20 total. Bake according to directions on your box mix, allow to cool.

Meanwhile, add the frosting to a bowl. Microwave 10-20 seconds until warm or use a double boiler on the stove. Add the extract, and mix until combined.

To frost, just dip the tops of your cupcakes into the bowl, then swirl.

    Wow – these look delicious. I like how you decorated your mom’s cupcake. It’s been a very long time since I had a Creamsicle popsicle – loved them as a child… I had one of those yogurts more recently. Yum…. will keep this in mind – I have a box of cake mix to use soon.
