National Ice Cream day is coming up! July 19th to be exact.
Concocting easy, healthy, and tasty frozen yogurts is one of my favorite things to do in the summer! On our recent staycation (read about our fun activities here and here), we made a few different versions to enjoy outside in the evening. Cookies and Cream, then this peanut butter chocolate chip!
Since we have health restrictions in my house, we also make this with coconut yogurt for a dairy free option! It is just as delicious too!
Easy Peanut Butter Chocolate Chip Frozen Yogurt
♥ 1 cup greek yogurt or coconut yogurt
♥ 1 cup unsweetened vanilla almond milk or cashew milk
♥ 2-3 heaping tbsp of PB2 powder (or you can try regular peanut butter, just melt it first)
♥ 1/2 cup sweetener that measure like sugar (we use stevia)
♥ Handful of mini chocolate chips
1. Mix all the ingredients until thoroughly combined. If using regular peanut butter, make sure to melt it so it will incorporate better. I prefer the PB2 in this since it turns out fluffier, but if you don’t have that, regular will be good too.
2. In your ice cream maker, add ingredients. Mixture should form a soft serve like texture in 10-15 minutes 🙂 No ice cream maker? No problem! Add to a shallow Tupperware. Freeze, then stir every 30 – 45 minutes until soft serve texture is achieved.

Chemist Tips: Since this is a lighter, less fat version of ice cream, contents can stick to your ice cream maker. I recommend spraying with some non stick spray before use. Also, some of the yogurt will settle to the bottom, but that is okay 🙂 If you have left overs, you can freeze it. To thaw, pop in microwave for 30 seconds or until soft. Or set out on the counter for awhile.
