This was a snapchat tutorial I did a few weeks ago. I had many requests for the exact recipe details, so here it is 🙂

Coffee cake is one of those desserts that has so many possibilities. Most coffee cakes have absolutely nothing to do with actual coffee either, it is just the texture that makes it a coffee cake! But it pairs so well with hot drinks, perfect for breakfast, and also great for a snack!
For my Dad’s 63rd birthday a few weeks ago, I wanted to do something non-traditional in terms of birthday cakes. I thought about it for awhile and decided a coffee cake would be fun! Since my dad is a huge coffee fan (just like me 🙂 ) I decided to take it further with actually infusing it with coffee flavor!
If you aren’t a coffee fan, no problem! You can substitute it with a tea concentrate or even almond milk. The coffee flavor inside is really the best part though! Even my husband, who doesn’t like coffee at all enjoyed this cake!
Since my husband can’t have dairy, I decided to make this dairy-free too, so he could have some with us!
This cake is definitely not overly sweet, which is my favorite part about it. If you love super sweet coffee cakes, just add in more sweetener! I love how dense this turned out too! Almost bread like in texture. Of course, the smell it permeates throughout the house as it bakes is heavenly!
- 4 cups oat flour (or regular all-purpose)
- 1 cup cashew milk
- 1 cup brewed coffee cooled
- 1 cup coconut sugar (or brown sugar)
- 3 tsp baking powder
- 3 tsp pink salt (or regular)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup apple sauce
- 1 tsp cinnamon
- 1/3 cup coconut sugar (or brown sugar)
- 1/3 cup melted coconut oil, cooled
- 1/2 cup oat flour
- 1/2 cup coconut sugar (or brown sugar)
- 1/4 cup melted coconut oil, cooled
- 4 tbsp brewed coffee
- 1-2 cups powdered sugar
- Preheat oven to 350 degrees, spray a bundt pan with non-stick spray. You can also use a regular cake pan or even a loaf pan!
- Mix the dry ingredients together for the first group, then add in the cashew milk, coffee, and applesauce. Stir until just combined!
- In a separate small bowl, combine all the ingredients for the middle section (cinnamon, coconut sugar, and oil). Mix until combined.
- In another small bowl, mix together the coffee cake topping (which will be the bottom of the bundt pan once flipped).
- In your cake pan, add half of the cake batter. Next, add all of ingredients combined for the middle and spread evenly.
- Top with the rest of the cake batter, then add the coffee cake topping evenly.
- Bake around 30-40 minutes, but check it to see when it is cooked through.
- Allow to Cool.
- Poke some holes in the top with a small straw or fork. Mix up the glaze until you get the consistency you want, the drizzle on top!
I chose to use big holes so I could add candles as well, but if you don’t want the holes noticeable, definitely go with a fork or toothpick 🙂
If you want to make this gluten-free, simply swap out the flour for regular all-purpose gluten-free powder and add the appropriate amount of Xanthan Gum. Read these baking tips for a conversion chart.
Also, you probably saw on snapchat that I used a french press! French press coffee works great for this, but regular is totally fine too!

This is just fun to make and fun to eat! Like I said, my husband doesn’t like coffee at all, but he really loves this coffee cake! Bonus, it smells divine. Even Ruger the Bulldog was totally into it 🙂

I think you will like this one Laurie! The coffee flavor isn’t prominent, just adds a nice richness. Just eliminate the glaze with coffee in it, or add milk instead 🙂 This lasted about….half a day lol
