Soft Dairy-free Fudgy Brownie Cookies
A delicious, dairy-free treat that feels like a brownie, with really rich flavor, but also good for you!

Ingredients
2/3
cup
oat flour
1/3
cup
unsweetened cocoa powder
1/2
tsp
baking soda
dash
salt
1
tsp
vanilla extract
1/2
cup
unsweetened apple sauce
4
tbsp
creamy almond butter
can sub peanut butter too
3
tbsp
honey
1/2
cup
cacao nibs
Instructions
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper and spray with non-stick cooking spray!
Mix the first four ingredients together (all the dry) just to combine.
Add everything else and stir!
This dough is sticky, so spray a cookie scoop (1 tbsp size) and line the cookies on your baking sheet. It makes about 16 of them.
With a fork, or just your fingers, flatten the tops a little.
Bake about 8-10 minutes depending on your oven. I like them a little soft on the inside.
Cool on the sheet for a minute, then transfer to a wire rack. Enjoy!
