For a few weeks on snapchat (alexisroch) and instagram, I have been sharing bits and pieces of our summer brunch series. Today we are finally sharing our project!
This week is dedicated to our summer brunch series remake!
First up is this frozen fruit cake that is completely allergy-friendly and is stopped with this amazingly easy jam!
This brunch series was inspired by so many readers who always ask about gluten-free or dairy-free brunch ideas. Shanley, from Just Betty Blog, was the other inspiration for this brunch series. She went on a paleo diet for her hormones. She was really struggling with gluten and dairy, so a paleo diet is great for that.
Things were okay for her, but the other issue, is she has an egg allergy! So, that doesn’t leave many food options, especially for breakfast or brunch, which is typically centered around eggs!
Using my chemist tips for eliminating eggs in baking, I came up with some ideas that make for a great brunch menu. Just Betty Blog worked on some other great items, which she is sharing this week too!
This frozen fruit cake is so great for summer because you can make it way ahead of time, and just keep it in the freezer. I baked it for awhile to toast it, but you can actually eliminate this step and just freeze it!
Either way, it is like an ice box cake that you can serve with an ice cream scoop.
- 3/4 cup coconut flour
- 1 tsp salt
- 1/4 tsp baking soda
- 1 1/3 cup applesauce
- 1/2 cup coconut oil
- 1/2 cup honey can also use maple syrup
- 1/2 cup peaches, finely diced
- 1/2 cup pineapple, finely diced
- 1/2 cup cherries, finely diced
- 1 cup raspberries
- 1 cup cherries, pitted
- 1 tsp fresh lemon juice
- 4-5 tbsp honey depending on sweetness of fruit
- Preheat oven to 375 degrees. Spray a 9x9 cake pan and set aside.
- In a medium bowl, mix up the first three ingredients until combined. Next, add in all the other ingredients except for the fruit.
- Once that is combined, add in the fruit and stir until just mixed. At this point, the consistency will resemble a dough or mashed potatoes. If it isn't that firm yet, add in a little more coconut flour. Depending on your fruit, it may need more dry ingredients. I have used up to an entire cup of coconut flour.
- Bake for about 20 minutes (this is just to toast the top). When the top is golden brown, take out and allow to cool.
- Now, all you have to do is pop it in the freezer and serve with an ice cream scoop! I always let it sit on the counter for a few minutes to soften.
- If you don't want to toast it, you can actually pop it right in the freezer once it's mixed 🙂
- For the Jam***: Add all the ingredients to a small sauce pan. Cook over medium heat, stirring constantly for about 20 minutes. It will be bubbly at this point. Reduce heat to a simmer, and simmer another 20 minutes or so. It will continue to firm up the longer it is on the stove.
- Add to a jar and allow to cool before you add the lid. This will last 4 or 5 days!
This is my quick fix jam. The honey and natural sugars in the fruit along with the lemon juice create a jam like consistency! You can use store bought or eliminate it if you want. It tastes great either way!
Each time I make this jam, friends will ask me how in the world I make jam? The chemical used in most jams or jellies is pectin. Jelly made with pectin is great, but it can be very time consuming.
This quick fix jam is a great alternative. It doesn’t last as long (4-5 days firm), but it is perfect to use within a few hours and is just like jam! All the natural sugars from the fruit with the honey jelly up and the lemon juice helps keep it fresh too.
We make this ALL the time for a natural jam and it is great! Feel free to use your favorite jam or syrup on top of this. And of course, it tastes great without it too! 🙂

This looks so yummy… If I don’t have coconut flour readily on hand, would oat or AP flour work (I know they are not GF). Can I use any fruit for the jam, like strawberries and blueberries? Looking forward to the rest of your and Shanley’s brunch series!

You can definitely use different flour, but you will probably need to bake it for sure. Coconut flour is really spongy so it soaks up the moisture, but baking is great too! You can definitely sub other fruits, although some berries may produce more moisture, so you may need to cook it a tad longer. It will turn out great though!! 🙂
