Instructions
In a large bowl, combine coconut oil, honey (or sugar), and eggs.
Stir well until everything is incorporated.
Add in the extract, pumpkin, and almond milk, stir until combined.
In a separate bowl, combine all the dry ingredients (spices, baking soda, salt, flour, and oats).
Mix dry ingredients until combined.
Add the dry ingredients into the pumpkin mixture, stir until just combined (don’t over mix it). It is okay if a few lumps are in there.
Add mixture into a greased muffin tin. It should fill 9-10 spots.
Bake at 350 12-15 minutes or until toothpick comes out clean.
Allow to cool in the tin before removing.
Top with whipped cream or apple butter.
