Heavenly Fluffy Gluten-Free, Dairy-Free Blueberry Cake

Ingredients
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a round cake pan and set aside.
  3. Mix the dry ingredients until well combined.
  4. Whip up the dairy-free cream cheese in a small bowl, add in the eggs and applesauce. Mix well, then add to the dry ingredients.
  5. Add in the extract and mix until everything is well incorporated (it’s okay if there are a few little chunks of the dairy-free cream cheese, it makes it fluffy!).
  6. Fold in the blueberries, then add to the pan.
  7. Bake about 20-25 minutes, depending on the size of your pan. You want it to be just done on the inside, but not overdone.
  8. Allow to cool before cutting!
Recipe Notes

If using gluten-free flour, read my baking tips here and add the appropriate amount of xanthan gum.  I also love using oat flour for this!

Tofutti dairy-free cream cheese is my favorite brand, but there are other options at the store in the cream cheese section!
