I believe the first item I ever made in the kitchen would be rice krispie treats!
They were one of my favorite snacks to have as a kid, and the homemade version was so much more special than store bought. I’ve been making these for my husband since the day we got married, but as you know, dairy is something he can’t have anymore. I wanted to create a dairy-free rice krispie treat that was just as delicious as the original one!
They turned out so good, even I couldn’t stop eating them 🙂
When it comes to rice krispie treats though, I prefer ones that are really thick and chewy. Like the kind you get at a sandwich shop or even the school lunchroom!
I became slightly addicted to buying these huge rice krispie treats in highschool from our lunch room. They made them fresh everyday, and they were literally about two inches thick. They had a much higher marshmallow ratio vs a rice cereal ratio which was perfect. Plus, they were only $0.25!
So, I wanted these dairy-free rice krispie treats to resemble that, and I made sure they had just the right amount of marshmallows in them!
- 5 cups rice krispie cereal
- 1 10 oz bag marshmallows
- 1/4 cup coconut oil
- 1 tbsp coconut nectar or honey
- Spray an 8x8 pan with non-stick spray and set aside.
- In a large pot, pour in the coconut oil and marshmallows. Stir around until all the marshmallows are coated.
- On medium heat, stir the marshmallows until they are starting to melt. Stir in the coconut nectar (or honey) and stir until the marshmallows are JUST melted.
- Quickly add in the cereal, and mix up until all of the cereal is coated.
- Add to the pan, and pat down until evenly distributed.
- Tip: spray your hands with non-stick spray and use your fingers to pat down!
- Allow to cool completely (a few hours). Or pop in the fridge for 30 minutes to firm up!
Why did I add coconut nectar? I made the recipe with just the coconut oil and I didn’t like the lack of stickiness in the marshmallow mixture. It still worked fine, but I really wanted it to have that feel like it had the traditional butter in it. I used coconut nectar since I had it on hand, and it worked great.
Honey has the same stickiness about it, so you can swap that in too. If you don’t want to use either, it will still create a rice kripsie treat, it just won’t have that great sticky texture!
Otherwise, you can’t really go wrong with these, they are always a favorite and taste good anyway you mix them up!

Oh my these look delicious. I was recently craving these after a friend brought some homemade ones to a party that were out of this world. I found some at Publix’s bakery but I’m sure they’re not the healthiest so I have to try your recipe.
They are always just so delicious!!! This version is a little healthier than regular since there is not butter…but the taste is just as good 🙂

You definitely don’t taste the coconut. My husband can’t stand the taste of actual coconut, but it has been a great substitute for baking for him. I always buy organic, refined coconut oil. It doesn’t even smell like coconut, so I loving using it 🙂

I have tried MANY versions of dairy free rice krispie treats. These are far and away the BEST ones I have made. I used honey instead of coconut nectar, since it was the only thing I had on hand. Delicious! This is my new go to recipe! Thank you so much.
