This roasted peach frozen coconut yogurt is DELICIOUS! And dairy-free, so everyone can enjoy it!
My husband is a huge peach fan. It is his favorite fruit, so he always looks forward to peach season. I don’t really like peaches raw, but baked or in frozen treats they are amazing!
Out of all my kitchen machines, this ice cream maker is my favorite thing. It can make almost anything into ice cream and it is so easy to use! Plus, it is affordable and doesn’t take up much space. If you don’t have an ice cream maker, you can definitely freeze this after it’s mixed up. The flavor is the same and it’s delicious either way!
Did you see my watermelon milkshake from a few weeks ago? I mentioned how much we love frozen coconut yogurt. It doesn’t really have a coconut taste, but it is so creamy. It is truly the perfect substitute if you can’t eat dairy.
My goal for the summer was to create a frozen coconut yogurt to make anytime I wanted. Then I decided to make it a roasted peach frozen coconut yogurt, and it turned out amazing!

- 1 can unsweetened coconut milk, chilled
- 1 can of light unsweetened coconut milk, chilled
- 2/3 cup coconut sugar (or your favorite)
- 3 tsp vanilla extract (see homemade version below)
- 1 tsp pink salt
- 2 ripe peaches, diced
- Honey
- Preheat oven to 400 degrees.
- Spray a baking sheet and spread peaches evenly. Drizzle peaches with honey.
- Bake about 15-20 minutes until peaches are soft and starting to brown.
- Allow peaches to cool, then add to a mixing bowl along with the sugar, extract, and salt. Whisk until smooth, but still has some peach chunks. (you can also use a stand mixer)
- Add in the coconut milk (note, full fat coconut milk will have fat on top, that's good!).
- With the beater attachment, beat until frothy and smooth. You can also use a blender for this portion!
- Add according to directions and allow to mix for 20 or so minutes. Take it out and place in a tupperware dish. Freeze for a few hours to firm up.
- Skip the ice cream maker and add to a tupperware dish. Freeze overnight. Allow to sit out for a few minutes before serving.
So easy right? Now here is a picture to show you a little bit of the consistency you want to see while making this!
If you go straight to the freezer and don’t want to use an ice cream maker, just make sure you allow at least 8 hours to freeze or overnight. To achieve the same creaminess, take it out every few hours to mix it up.
I like to use the ice cream maker to get that typical ice cream texture. Adding it to the freezer for a few hours after you use the machine helps it get firm enough to serve with a scoop! Or you can keep it soft serve. The possibilities are endless and all taste great!
The reason this works so well is the use of my homemade vanilla extract. It is made from alcohol (which almost all extracts are), but it really helps this mixture not freeze too hard. If you don’t have extract on hand, you can also use a few teaspoons of alcohol. It doesn’t alter flavor, but will have keep the texture just right.
This recipe calls for pink salt which I love, but you can also use type 🙂 Read why I love Himalayan pink salt here.

Looks sooo delicious! I love peaches, especially the white ones, although I grew up on the yellow ones (canned in heavy syrup – shudder). Now, thinking out of the (freezer) box – when it comes to non-peach season, can we make this wonderful concoction by using thawing frozen peaches and proceeding with the recipe as usual? Would there be too much moisture? Love your chemistry work!

I bet you could use frozen peaches thawed and then roasted! I would probably just make sure to pat them dry before putting them in mixture, but I bet it’s just as good!!

This recipe is right up my alley! I love coconut ice cream (made in Trinidad) but soo not exactly healthy. Your froyo recipe sounds so light and refreshing for this heat plus I’ve never thought to mix peach with coconut but I bet they compliment each other really well.

I bet coconut ice cream made in trinidad is AMAZING! This one is really good, I love the peaches. You don’t taste much coconut, so it is very mild and mostly a sweet peach flavor. It is very refreshing!

How do you keep little balls of frozen coconut fat from forming in the ice cream?

I have never had this problem before. You can try using all light coconut milk for less fat. I do a combo of both and it doesn’t seem to form any fat layers for me.
