super simpleicedcoffeeIt’s Monday…which means we all probably need an extra boost to get the week started. Now, I am a total hot coffee drinker in the morning. I don’t ever feel the same if I start with an iced coffee. Even in the summer when it is already 80 degrees at 5:30am, I need hot coffee. That being said, in the afternoons I hate hot coffee. Unless it is snowing or something like that 😉 So, afternoons are all about iced drinks to spark my thoughts.

Since I’m a chemist, I love mixing up recipes with extracts! I think they add a burst of wonderful flavor to almost anything! This recipe involves vanilla which most people have on a hand, but I also use caramel, almond, lemon, butterscotch, etc!

Believe it or not, I am not really a Starbucks coffee fan. As I mentioned here, I’d much rather have Dunkin coffee mainly due to the many flavors offered. And even more so, I like fancy, unique coffee from little hole in the wall places. I don’t have many of those places around, so I make my own at home all the time. I especially love to make frappuccinos. Those take too long though, so iced coffee is always the go to. Here is my simple iced coffee recipe. Simple, yet effective 🙂 Oh and Bonus…it’s low calorie, low sugar, and good for you!

Super Simple Iced Coffee

  • 1 cup brewed coffee ( I like to use stronger than normal so it doesn’t dilute as much)
  • 1 cup vanilla almond milk (I use unsweetened)
  • 1 tsp vanilla
  • 2 packets of stevia (give or take depending on how sweet you like it)
  • Ice

I make a cup of strong coffee or use leftover coffee. Then I mix in the almond milk, stevia, and vanilla. I pour it over a tall glass of ice. This can make two regular servings. Or it can make one LARGE serving, which is totally needed sometimes (And let’s be honest, I never have two servings haha). I enjoyed mine while working on the computer!

      You know, Mcdonald’s actually has good coffee! I have never tried their iced caramel coffee though…I might have to do that soon 🙂

    This is great! I love seeing healthy alternatives for higher-calorie foods. I love Starbucks–however, like you said, it is a little pricey. I am a huge advocate for Chai tea lattes (hot or cold)
