Mix it Up Monday is here again and today I am sharing with you one of my favorite, easy, refreshing tropical drinks. I will be making this today for Memorial Day along with some chicken on the grill! This is similar to a Sonic cream slush, minus the sugar count 🙂
Pineapple is most definitely my favorite summer fruit. One bit of juicy pineapple whisks me away to a tropical island, basking in the sun, and sipping on a fruity cocktail. Do you ever have that experience? Obviously, we can’t be transported to the places we want to be, so I like to recreate the setting at home. I’ve posted many drink recipes on the blog because that is how I love to kick back and relax. And I always make healthy options at home, and leave the extra sugary stuff for a treat out.
This recipe is so simple, yet so refreshing!
Skinny Pineapple Cream Slush
♥1/2 cup fresh pineapple, diced
♥1/2 cup frozen pineapple, diced
♥1 cup unsweetened vanilla almond milk (or milk of your choice)
♥2 packets stevia (or sweetener of your choice)
♥8 oz flavored sparkling water ( I used coconut, but you could use pineapple too)
In a blender, blend up all your ingredients except for the sparkling water. Fill a tall glass (16 oz or so) halfway with the blended ingredients, then fill it to the top with your flavored water. The flavored coconut water I use is delicious on it’s own, but mixing it with this makes it the perfect slush! I’ve also used pineapple sparkling water, and mango sparkling water.
