Happy Friday! Spring weather is in the air for sure this week! We had beautiful temperatures in the 70s and 80s.
Wednesday was also the one year anniversary of the tornado that hit our house. I can’t believe it has been one year already! And it is crazy that happened in winter too.
With warm weather in the air, I have been making iced green tea matchas in the afternoons. They are so energizing and refreshing! I shared the recipe on instagram a few weeks back!
Asparagus has been so cheap the past few weeks, so I have been buying a ton of it and roasting it on the weekends to eat throughout the week. I use the same recipe as this cauliflower one. Recipe is also on Instagram 🙂
I’ve got a really neat chocolate candy recipe coming up soon! It turned out soo good, and I have already made it twice! It should be on the blog in a few weeks.
I had a few people on snapchat asking more about the popcorn recipe I always make. If I don’t use my popcorn maker, I will always make my microwave version which is so easy. I love this kettle corn one and this cayenne lime one. They are great for a quick snack!
If you missed Tuesday’s post, I shared all the details of this awesome old-fashioned mineral bath we got to visit. This place was like a blast from the past, and I loved it! Next week I will be sharing more information on this amazing mineral water too.

Ok – I have to know. How do you keep your asparagus from being soggy left over? I think roasting it in bulk is a great idea, but mine never turn out well for leftovers.

It is definitely best the first day. I don’t mind it a little soggy afterwards if it has a good flavor, but when I do it for my husband (who is soooo picky), I will make sure to not roast all the way through and use very little oil. Then when he is ready to eat it during the week, I will pan fry it a bit to cook all the way through. The key is to not cook all the way through the first time. I think that definitely helps!

Happy Friday! Yep, it’s asparagus season – my farmer’s market has some of the freshest. I’m the only one that eats it, but more for me!!! This weekend it’s about home and my little family. Enjoy yours!!!
