Since my sweet husband can’t have dairy of any kind without getting very sick (read more about that here), I love researching and coming up with dairy-free recipes he can enjoy. He loves sweets more than anything, so I enjoy making his favorites into a version he can have.
So far I have made his favorite pumpkin pie, dutch brownies and chocolate fudge cake among others as dairy-free and they have turned out great!
When I saw these cookbook, I was curious to try out some of the recipes for my husband.

My Review:
I was excited to see the different options this book had including, breakfast dishes, main courses, salads and sides , snacks , drinks , and desserts. It is always nice to have a variety of recipe genres in a cookbook.
Coconut is such a great choice for dairy-free cooking and baking and it is interesting to see how other cooks put the combination of flavors together. I tried out a couple of recipes and some of the drink recipes. My husband liked the hot chocolate pretty good and it was fairly simple to make.
All of the dishes were wholesome and healthy too which I always appreciate!
The other recipes look really delicious, but the one thing I didn’t like was the types of ingredients many of the dishes contained. Many of them are hard to find at a regular grocery store.
When I bake, I like it to be simple and similar to the regular version of things. My husband eats dairy-free out of necessity, so he just wants something to taste like the real deal. Many people like my dairy-free recipes because they don’t contain strange, unknown ingredients, or a huge list of ingredients. I like to keep it normal and simple.
If you love coconut and the taste of it, you will probably enjoy this cookbook!

This looks great! I’ve been adding more coconut into my diet as I try to eliminate more dairy and stuff that keeps me fat. So I’ve been using coconut milk and coconut sugar lately and I love it!

Coconut is so great for a dairy alternative! My hubby loves his sweets, but he can’t have dairy without his colon, so I love coming up with fun alternatives for him. I love coconut sugar too! I usually use that in my recipes vs regular sugar. I think it tastes just as good 🙂
