Delicious apple breakfast cookies

September is all about apple season! These delicious apple breakfast cookies are the perfect way to take advantage too. Apple breakfast cookies are perfect for on the go or as a little snack with hot tea or coffe!

Did you catch this post about apple season (and the giveaway)? Needless to say, I just adore all the apple selections this time of year. Trying out new flavors and types of apples is one of my favorite things to do when September rolls around.

These best part about these wonderful apple breakfast cookies is how heavenly they smell while they are baking. Warm apples, cinnamon, and maple syrup are the best combination!

One of the key ingredients in these cookies is oatmeal. Oatmeal is one of the best breakfast options, especially in the fall on a cooler morning. I also love it as a cold overnight oatmeal, like this recipe I make at least a few times a week.

When it comes to oatmeal, you can really use any type in this recipe. For chunkier cookies, try it with old-fashioned oatmeal. If you want more of a traditionally smooth cookie, you can also try it with quick cooking oats or instant oats. This recipe is very easy to customize where you need it.

Ingredients
  1. 1 cup oat flour
  2. 3/4 cup old-fashioned oats **
  3. 1 1/2 tsp baking powder
  4. 1 tsp cinnamon
  5. 1/2 tsp apple pie spice
  6. 1/4 tsp salt
  7. 2 tbsp coconut oil
  8. 1 tbsp applesauce
  9. 1/2 cup honey**
  10. 1 egg
  11. 1 tsp maple extract**
  12. 1 medium apple, chopped finely **
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a cupcake tin for perfect shaped cookies, or use a baking sheet with parchment paper.
  3. Mix all the dry ingredients together first until combined.
  4. In a separate bowl, mix the egg, oil, applesauce, honey, and extract until well combined. Add this to the dry ingredients and stir until incorporated.
  5. Fold in the diced apple. I like to chop most of it finely, but leave a few chunky pieces too.
  6. Add to the muffin pan or the baking sheet, bake about 8 minutes until they are cooked through. Don't over bake, it will dry it up!
  7. Cool for 5 minutes before removing from pan.
Notes
  1. For gluten-free, make sure to use certified gluten-free oats and oat flour.
  2. You can also use maple syrup in this recipe, it will work equally as well and taste delicious!
  3. Vanilla extract will also work, but won't have as rich of flavor.
  4. Feel free to use your favorite apple. I love Fuji!

Baking Tips for Apple Breakfast Cookies

My favorite part is all the soft chunks of apple in every bite! This recipe is so easy, but you can also play around with the flavors depending on your preference. If making these for kids to enjoy, you can always increase the sweetness. I don’t like things too sweet, so I always go a little light on the maple syrup or honey.

Another way to enjoy this is in a huge cake pan! Increase the baking time to about 20-25 minutes at 350 degrees. Then, cut into squares! The possibilities are endless!

Changing up the type of apple is also fun to do. Try it with Granny Smith apples or even a combination. For a really smooth cookie, mince the apples into fine pieces!

CHEMIST TIPS!

untitledMany readers have asked if they can use a different sweetener besides honey or maple syrup. These cookies definitely need liquid sweetener for the consistency.  You could probably use agave as well. I am not a big fan of it, but it would have the same texture which is great!

As with all my recipes, this is very adaptable and very hard to mess up. Play around with the flavors and see what works best for you. This is just a fun, easy way to have a healthy, clean eating treat 🙂

    When I wanted to make this recipe for the first time, I didn’t have any apples in the house so I went out and bought 1 specifically for this recipe. Silly me left the apple on the counter as I didn’t want to bake while my hubby was sick in bed with a headache. I left the house for a short period of time and when I returned – the apple had disappeared and my hubby was up and about! I ended up making the recipe using chopped strawberries with some allspice. I also used a sugar-free pancake syrup as a sweetener. The cookies tasted good.
    I was wondering what is the serving size; is it 1 or 2 cookies?

      That sounds like a great substitution! I love baked strawberries! I used a regular muffin tin and it fits 12 cookies. If I use a baking sheet, I can still get 12 smaller cookies.

    These are excellent. Instead of oat flour I used 1/2 c. ground almonds and 1/2 c. rice flour. Instead of coconut oil I used grapeseed oil. I substituted simply because I didn’t have the ingredients the recipe called for and didn’t want to wait to buy them. These cookies are so good I made a second batch to share.
