Popcorn is truly the most delicious, easy, healthy snack! It has always been one of my favorite foods since I was a little kid.
Sometimes I won’t even go to the movies if I won’t be getting popcorn! Especially if it is an epic movie…you gotta have popcorn!
This 2 minute cayenne lime popcorn is one of my favorite combinations so far. Since summer is coming up, I am all about those fresh flavors involving lemon and lime. Last week, I told you ALLLL about how amazing lemon is and all the detailed health benefits, but lime is also a great flavor. While it isn’t as powerful as lemon, it is the perfect pairing with spicy stuff.
It really makes this restaurant garden salsa have the perfect flavor, and that is what I was going for with this popcorn too.
I am all about easy solutions to treats, and microwavable popcorn is always everyone’s go to. And it is delicious for sure, but the amount of chemicals in it, make it not as fun to eat anymore! Anytime I can make it from scratch instead, I always do!
Like this cinnamon caramel kettle corn from last year. I make this all the time!
So, here is the easiest, tastiest recipe for 2 minute cayenne lime popcorn!
- 1/4 cup popcorn kernels
- 2 tsp pink salt (or regular)
- 2 tsp coconut oil
- 1 tsp cayenne pepper
- 1 tsp lime seasoning
- 1 tsp lemon zest
- 1/2 lemon squeezed
- First, add popcorn kernels to a bowl.
- Coat with the coconut oil.
- Add in the salt, cayenne, and lime seasoning. Stir until all kernels are coated.
- Spoon into a paper lunch sack. Leave excess oil in the bowl.
- Fold over paper sack at least two times (see picture below).
- Lay on the side in the microwave. Shake a little to make sure kernels are spread out.
- Microwave around 2 minutes or until popping stops!
- Be careful, it will be HOT! Allow to rest for a minute or so in the microwave.
- Add to a bowl. Before serving, top with the lime juice and stir. Then add in the lime zest on top with some additional salt!
It is normal for some kernels to remain unpopped. You don't want them all to pop or it may burn 🙂
The lime seasoning I used had garlic and cilantro flavors too, but you can use any kind you want! I would recommend using one that doesn’t contain much salt, since you are already adding some to the recipe.
You can buy this lime seasoning here! This is my favorite pink salt which I highly recommend.
If you are curious about pink salt, you can read all about it in this post. You can equally swap regular salt if you don’t have pink salt 🙂
If you don’t use a microwave or don’t like it, you can also turn this into a stove top recipe. You will need to increase the amount of oil though. First, add some coconut oil to coat the bottom of a pan. Heat to medium high heat with one kernel in the oil. Once that kernel pops, you can add in the other kernels and seasoning.
Cover it with a lid, and shake over the burner as it pops. Once popping stops, just remove from the heat.
If you do choose to do this over the stove, I would definitely recommend increasing the amount of kernels too. This is a small portion for a microwave, on the stove will need more!
We love making this for a movie night with something fun to drink like these cream soda floats! I do have some more popcorn recipes in the making right now, so stay tuned for that. Feel free to follow on instagram for a little more behind the scenes on my popcorn obsession 🙂
Enjoy!!!
