Although I don’t eat gluten-free out of necessity, I really love experimenting with gluten-free recipes for others to enjoy!
I know many people that have had to make a switch to using flour without gluten, which is why earlier this year, I did some chemistry experimenting to come up with the best gluten-free baking tips!
Personally, I think donuts are just more fun to eat versus a muffin or something like that. They make you feel like you are really having a decadent treat, even though all the ones I make are much healthier than store bought one. Don’t you think?
They are just cute!
I bake all my donuts with this Wilton Nonstick Donut Pan, and love it! Last summer I made some strawberry cake donuts and some blueberry muffin donuts. Both were big hits!
Today, I am sharing a really easy Dairy-free Gluten-free Vanilla Glazed Donuts that you are going to LOVE! Especially if you have to eat gluten-free. If you don’t have to limit gluten in your diet, you can easily swap out the flour with your regular kind.
Last weekend on snapchat (@alexisroch), I showed the whole process of these baking away. I had a couple of messages asking what was the recipe?!? So, here it is 🙂
Dairy-free Gluten-free Vanilla Glazed Donuts
- 1 1/2 cup gluten-free flour
- 3/4 tsp xantham gum
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp baking poweder
- 1 tsp apple pie spice (or cinnamon)
- 3/4 cup coconut sugar
- 1 1/2 cup unsweetened apple sauce
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp maple extract
- 1 cup powdered sugar
- 3-4 tsp vanilla almond milk
- 1/8 tsp vanilla extract
- Preheat oven to 375 degrees.
- Spray a donut pan with non-stick cooking spray and set aside.
- In a large bowl, mix together the first seven ingredients (all the dry) until mixed together evenly.
- Next, add in the wet ingredients, mixing until evenly incorporated.
- Divide evenly into donut pan (my pan holds six donuts, so I did two batches). You will get about 12 donuts out of this.
- Bake about 10 minutes or until baked through. Don't overcook though!
- Meanwhile, mix up the glaze ingredients. Start with 3 tsp of milk, and use a little more if necessary. I like a few different textures for this. One is thick like an icing, the other (with more milk) is thin like a glaze consistency. You can use either one or both! You can also eliminate it! 🙂
- Allow donuts to cool, then dip into the icing/glaze.
- Enjoy!
If you don’t care what type of flour you use, you can eliminate the xantham gum and use regular all-purpose flour!
I do have a small note to mention about gluten-free flour, if this is your first time using it, just remember that it has a slightly different taste, so don’t eat the batter raw…it isn’t that great! I think most of that flavor bakes out great and gives an interesting enhancement to baked goods 🙂
