This easy dairy-free berry cobbler is the perfect option for using up fruit that is going bad soon. This time of year, I just can’t stop buying berries! Much more than I could ever eat in a week, but they are just so cheap and pretty too.

Do you do that this time of year too?

I buy up a few pints of strawberries and blueberries, anything that looks good! By the end of the week, the berries are getting mushy. Almost to the point of not being edible anymore!

I hate throwing anything away, so I like to make something fun out of it.

Last year, I made this rustic fruit crisp which is also healthy and light. I have made this so many times, but it is just so delicious.

Instead of a crisp, I decided to come up with a cobbler recipe that could be used for anyone with food sensitivities. The result was so good! My husband also loved it, and he is pretty picky! For this particular recipe, I just used the berries I had on hand which was strawberries and blueberries. You can use anything you have on hand!

Ingredients
  • 1 cup oat flour (or regular all-purpose)
  • 2 tsp baking powder
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup coconut sugar set aside about 1 tbsp of this
  • 2 cups fresh berries
  • 1/3 cup coconut oil
  • 3/4 cup unsweetened vanilla almond milk

Instructions
  1. Preheat oven to 375 degrees. Spray a 9x9 baking pan and set aside.
  2. In a medium bowl, mix the flour, baking powder, nutmeg and salt until combined. Add in the sugar (make sure to set aside about 1 tbsp of this).
  3. Now add in the coconut oil and almond milk. The flour mixture may seem a little soupy at first, but keep mixing. It will eventually get thick like a biscuit batter.
  4. In the 9x9 pan, spread the berries evenly. Sprinkle the 1 tbsp of coconut sugar you set aside. If your berries aren't very sweet, feel free to sprinkle a little more sugar.
  5. Add the cobbler flour topping on the berries, and spread evenly. I like to make sure some berries show through still (see picture below). You can also sprinkle a little more sugar on top.
  6. Bake about 25-30 minutes, until cobbler is cooked through.
  7. Allow to cool before cutting up!

Chemist Tip

Most oat flour is gluten-free, so it doesn’t have wheat in it. However, make sure to read the label. Some brands, have other fillers in the flour which can contain wheat. For other gluten-free options, you can try all-purpose GF, coconut flour, or another blend of GF flours. Do not use almond flour though, it is too mealy and won’t create that cobbler like crust. Make sure to check out all my gluten-free baking tips here.

If you do not care about eliminating gluten, you can use regular flour too! It won’t be quit as thick, but it is hard to mess up this recipe.

      Honestly, I’ve only been making it for a few years now. As a kid, I was always afraid to try it because it looked weird lol. But this recipe is so light and refreshing, it is the perfect dessert for summer! I think you would really love it!

      I always forget about cobblers, but they seem to be a big thing in Texas. Especially all the older people I know….they love making them! I always do pies and crisps too, but this one is so simple. I like to swap this out with a fruit crisp now too 🙂

    Berries!! That’s one of the biggest things I miss about summers in the USA! We lived within walking distance of an organic U-pick strawberry farm and we’d pick so many strawberries, both for eating and for freezing. I made a lot of cobbler and strawberry pies those summers…. 🙂
