Every autumn, we love sharing a fall inspired recipe or project with you. Since it has been many years since we shared a recipe, I thought this would be a great post for you today.
This healthy pumpkin muffins are toddler and kid friendly! They are also a nice little treat and smell amazing!
These pumpkin muffins aren’t really sweet, so they are great for breakfast or with coffee!
You can make them sweeter if you like that, but we loved them just the way they are. Amelia thought they were delicious! I even put some whipped cream on hers which she thought was so special 🙂

Healthy Pumpkin Muffins (Toddler Friendly Too!)
- 1/3 cup coconut oil melted
- 3/4 cup honey or coconut sugar honey is less sweet
- 2 large eggs beaten
- 1 cup canned pumpkin
- 1/4 cup unsweetened almond milk
- 1 tsp pumpkin pie spice
- 1 tsp baking soda
- 1 tsp maple extract
- dash salt
- 1 3/4 cup whole wheat flour
- 1/3 cup old-fashioned oats
- In a large bowl, combine coconut oil, honey (or sugar), and eggs.
- Stir well until everything is incorporated.
- Add in the extract, pumpkin, and almond milk, stir until combined.
- In a separate bowl, combine all the dry ingredients (spices, baking soda, salt, flour, and oats).
- Mix dry ingredients until combined.
- Add the dry ingredients into the pumpkin mixture, stir until just combined (don't over mix it). It is okay if a few lumps are in there.
- Add mixture into a greased muffin tin. It should fill 9-10 spots.
- Bake at 350 12-15 minutes or until toothpick comes out clean.
- Allow to cool in the tin before removing.
- Top with whipped cream or apple butter.

Amelia Loves Pumpkin!
Amelia has been really into pumpkin since she started eating real food around 6 months old! Last Thanksgiving, all she talked about was pumpkin pie! She loved it, and wanted to eat it everyday after that lol
When it comes to toddler food, I try to limit the high sugar stuff, which is why these muffins aren’t really sweet! Limiting the sweetness really brings out of the pumpkin flavor too.
If you are making these for adults and want more sweetness, you can always just increase the amount of honey or sugar.
How to Make These Healthy Pumpkin Muffins Gluten-Free
I make these with whole wheat flour for Amelia, but you can very easily turn these muffins into a gluten-free recipe.
The best way is to use this baking mix already made. I use Bob’s Red Mill 1:1 Baking Flour. I always keep this on hand because it is the easiest way to swap out the flour in ANY recipe. The ratio is the exact same, so it is very simple to do. I also like this gluten-free baking mix because the flavor isn’t strong, so you don’t even know you aren’t use regular flour.
How To Make These Pumpkin Muffins Egg-Free
The eggs make the muffins more fluffy, but you can also use an alternative for your eggs.
Click over to these post on egg-free baking to find a good substitute. My favorite options in this list are applesauce or adding in more coconut oil. Both of those options can be used in this recipe without changing the flavor too much. We have ratio break downs in this post to help you too.
Making These More Dense
Unknowingly, I totally forgot to add the baking soda into these muffins (baking with a toddler is SUPER chaotic LOL), and it made these very dense. You can try this out too if you are into a more thick, dense muffin. My family prefers them with the baking soda though, so try not to forget that like we did! Amelia thought they were awesome this way though.
Baking with a 2 year old is pretty crazy, but very sweet. Amelia loves doing everything mommy does!
I am very excited to bake with her this Thanksgiving. She has already been talking about pumpkin pie! She is so excited to make it and more importantly, eat it.
