I have to say…this is probably one of the most delicious desserts I have ever made! And the fact that it isn’t bad for you, makes it even more amazing!
This gluten-free, dairy-free blueberry cake is SO rich and fluffy all at the same time!
I think what really made this cake turn out perfect was these huge Texas blueberries I bought at the store. They were jumbo blueberries, so they filled the cake with blueberry goodness!
This instagram photo I shared last week gives you an idea how big and juicy they were! Yum!
One of my favorite things about summertime is how ripe and sweet all the berries are. To be honest, I really love all berries! I think they each have a unique quality about them and work better for different things. This raspberry muffin in a mug from a few months ago was perfect for a raspberry or strawberry because it wasn’t a very sweet treat, more of a muffin.
This rustic summer crisp from a few months ago was perfect for blueberries too! I love that crisp and can’t wait to make it for peach season 🙂
Anyways, back to this cake.
This was an old blueberry cake recipe I had in my recipe box that was delicious, but full of dairy products which, as you know, doesn’t work in our home. I thought it was time to remake this into a more allergy friendly dessert that I can make at home for everyone to enjoy! I shared a little behind the scenes on snapchat (alexisroch) for this recipe, and I showed oat flour for the base. You can definitely switch out any type of flour. If you decide to go with gluten-free flour, make sure to read my notes in the recipe 🙂
- 1 1/4 cup flour (oat flour or gluten-free)
- 1 cup coconut sugar
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup applesauce
- 3 oz tofutti dairy-free cream cheese room temperature
- 3 eggs
- 1 tsp vanilla extract
- 1 cup blueberries
- Preheat oven to 350 degrees.
- Spray a round cake pan and set aside.
- Mix the dry ingredients until well combined.
- Whip up the dairy-free cream cheese in a small bowl, add in the eggs and applesauce. Mix well, then add to the dry ingredients.
- Add in the extract and mix until everything is well incorporated (it's okay if there are a few little chunks of the dairy-free cream cheese, it makes it fluffy!).
- Fold in the blueberries, then add to the pan.
- Bake about 20-25 minutes, depending on the size of your pan. You want it to be just done on the inside, but not overdone.
- Allow to cool before cutting!
If using gluten-free flour, read my baking tips here and add the appropriate amount of xanthan gum. I also love using oat flour for this!
Tofutti dairy-free cream cheese is my favorite brand, but there are other options at the store in the cream cheese section!
I love using applesauce for a healthier option in baked goods. It really creates this airy, fluffy texture without hindering the taste or flavor of the dessert. You can equally swap out your favorite baking oil like coconut oil or vegetable oil in this dish. It will have the same flavor with a slightly denser like texture throughout.
Remember this DIY vanilla extract I made? That is what I always use in my baked goods, but you can also use store bought. For a fun twist, you can add any extract in place of the vanilla. I love using maple extract or almond extract. Both add a little different flavor, but it tastes great!
The cake pan found in the picture is part of this non stick set I talked about in this post! I bake cakes all the time in that pan and it comes out perfect. You can also use a pie dish for this 🙂
