Oatmeal is one of the healthiest breakfast options you can choose. These super easy creamy overnight oats are the perfect solution for a fast summer breakfast.

I feel like oatmeal is the ultimate comfort food. On a cold morning, it can really warm up your soul!

But, it is hot right now, so the last thing I want to do is warm up my body in the morning. I like to make overnight oats for an easy option, plus they are cold and creamy. Perfect for summer!

When it comes to creating the perfect breakfast meal, you need carbs, protein and  a little fat. These oats have all of these elements AND they actually taste delicious too!

Super Easy Creamy Overnight Oats

These oats are topped with Enjoy Life Foods seed mix which is the perfect option for anyone who has nut allergies. This seed mix is verified non-gmo, certified Kosher & Halal, and has zero artificial ingredients. This seed mix makes the perfect healthy fat source for these oats.

I love this seed mix because it is also slightly sweet and molds perfectly with the oats overnight 🙂

 

Easy Creamy Overnight Oats

Ingredients
  1. 1/2 cup old-fashioned oats**
  2. 1/2 cup unsweetened vanilla almond milk
  3. 1 tbsp raw honey
  4. 1 tbsp Enjoy Life seed and fruit mix
  5. 1/2 banana, sliced
  6. Fruit topping of choice
Instructions
  1. Combine the ingredients (except for the topping) in a mason jar with a lid.
  2. Store in the fridge overnight or at least 6 hours.
  3. Top with fresh cold almond milk, berries, and seeds when you are ready to eat!
Notes
  1. *To make these gluten-free, make sure to choose certified gluten-free oats.

Changes You Can Make

I made this for my husband, but he preferred it will  2 tablespoons of honey. He loves sweet things, so he enjoyed it with more. You can also use a few tablespoons of coconut sugar before you put it in the fridge overnight. This will create a nice sweetness. Coconut sugar is similar to brown sugar, but more natural.

Obviously, if you aren’t dairy-free, you can use any milk. Using almond milk or cashew milk does make this more creamy though.

More Chemist Tips

Since this recipe calls for bananas, I wanted to mention this. Putting bananas into a mixture before putting into the fridge will cause them to brown due to oxidation. I know some people who don’t like that! You can leave the bananas out and top them before you eat it. However, the bananas do make this really creamy when they sit overnight. I just take it out and stir it up really good 🙂

I plan on making this recipe until it finally cools down this fall!

  2. I love oatmeal! I have hot oatmeal 3-4 time/wk all year around, despite the weather. Topped with fresh fruit and nuts. Never had cold oats (unless mine went cold, lol). Might need to try this! Thanks for the idea!

    1. Oatmeal is so good for breakfast! I love it nice and warm in the fall/winter, but it gets so hot here, I love having them cold like this. It is really delicious! I hope you can give it a try 🙂
