They look like brownies, but they are totally cookies!
These dairy-free fudgy brownie cookies are so soft too which makes them a perfect little treat, plus they could not be easier to make!
Even if you aren’t much of a baker, these are very hard to mess up 🙂
I really wanted to make something that involved three of my husbands favorite things (that I love too)…honey, nut butter, and chocolate. His favorite breakfast is toast with peanut butter and honey! He is absolutely addicted to it. There aren’t many indulgences he can have these days with his health, so anytime I can come up with something he loves, I go for it!
If you want a really awesome brownie, try these dairy-free dutch brownies or my all time favorite raspberry oat brownies!
Something I am featuring in this recipe is a really neat, natural chocolate, cacao nibs. Have you tried them? They are really good for you, but also a really delicious treat. I add them to smoothies or on top of yogurt all the time. They bake really well too and create a nice crunch inside the cookie! I have some good tips coming up soon for you about this little ingredient so stay tuned for that!

On to the recipe!
- 2/3 cup oat flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- dash salt
- 1 tsp vanilla extract
- 1/2 cup unsweetened apple sauce
- 4 tbsp creamy almond butter can sub peanut butter too
- 3 tbsp honey
- 1/2 cup cacao nibs
- Preheat oven to 350 degrees.
- Line a baking sheet with parchment paper and spray with non-stick cooking spray!
- Mix the first four ingredients together (all the dry) just to combine.
- Add everything else and stir!
- This dough is sticky, so spray a cookie scoop (1 tbsp size) and line the cookies on your baking sheet. It makes about 16 of them.
- With a fork, or just your fingers, flatten the tops a little.
- Bake about 8-10 minutes depending on your oven. I like them a little soft on the inside.
- Cool on the sheet for a minute, then transfer to a wire rack. Enjoy!
You can easily switch out the flour equally for another type or a gluten-free variety. Make sure to read my gluten-free baking tips to make sure you add the right amount of xantham gum. You only need a tiny amount!
This also tastes AMAZING with peanut butter. You can definitely taste the peanut butter though, so if you want a more chocolate flavor keep the almond butter. Make sure the almond butter is creamy too!
These cookies don’t spread since they don’t have the elements to do that, so a nice little press will make them have a cookie shape. You can also just leave them as drops, just add another minute to the baking time since they will be a little thicker. Either way you do it, they will taste perfect.
Last chemist tip, you can freeze leftover batter or even all of it to use in ice creams, or other treats. It’s like a brownie batter! I have even put the batter in the fridge and served with fruit.
See how rich and chewy they look! They were very popular in my house! A delicious chocolate treat without the guilt 🙂

These look delicious… who doesn’t like a mix of textures, and chocolate! Did I mention chocolate?! If you freeze the batter, (or form mounds before freezing), do you thaw the dough before baking or bake frozen and add a few extra minutes in the oven?
I agree! If you use the frozen batter for like ice cream or added to yogurt, just leave frozen. For baking, just add another minute or two to the bake time 🙂 It should be good!!

I love the design of your website. I look forward to visiting it more often! These cookies looked delicious, but I have to say that I didn’t care for the taste at all. I ate one and threw the rest away. Considering the price of the ingredients and the fact that I’m at the end of a 6-week elimination diet with no processed sugar, that is saying a lot. Hopefully I’ll find other recipes and ideas here that can help me along the way with my RA.
Hi Mia! I am sorry to hear that 🙁 Everyone has enjoyed these so much, this is my first time hearing anything bad. Did you use almond butter or peanut butter? I haven’t made this in years, but when I made them for my husband, he wasn’t a fan of the texture at first because he kept thinking about his traditional cookie. He loved the taste though
I used smooth almond butter. I didn’t like the taste of the cookie itself, and for me, the cacao nibs were not good at all and just got stuck in my teeth. Hope that’s not TMI! From other recipes I’ve made, I think I prefer the taste of maple syrup rather than honey as a natural sweetener. That may also be a reason why I didn’t like these, but I thought I should try it as written because your picture of them looked so good!
Cocoa nibs are a little like nuts in texture, but so good for you. I love the crunch! Sorry you didn’t enjoy them 🙁
